Product Description: (Phaseolus vulgaris) You may also know this variety as the Orca‍ or Yin Yang bean, both of which make reference to its striking black-and-white color. Yet among its many names, Calypso is the truest to this bean’s early history. Or at least we think so.

In truth, the origin of Calypso is a bit mysterious. Most sources claim that it's been grown in the Caribbean for at least 400 years. Others say that it’s an Abenaki variety from the Lake Champlain region of Quebec. In all likelihood, both stories probably have some truth to them.

Today, the Calypso bean is prized for its creamy texture and mild, nutty flavor in soups, stews, and salads (and thankfully, that claim is easily verified). Dry bean. Bush habit. 50 seeds per packet.

Growing Information: Plant outdoors in well-drained soil after all danger of frost has passed. Germination occurs best in soils 60 degrees F or above. Direct seed roughly 3-4 inches apart and 1 inch deep. Space rows about 3 feet apart. 70-90 days to maturity.

How To Save Bean Seeds

Allow the plant to dry out completely. Mature pods will be brown and brittle. Make sure that your plants are receiving adequate airflow to prevent excessive moisture and mold growth throughout the drying process. However, a small amount of mildew spotting on the outside of drying pods is completely normal and has no reason for concern. Once dry, harvest the seed pods and crack them open. Sort out any damaged, misshapen, or rotting beans. Continue the drying process if necessary then store them in a cool, dry place.
